Jain Mexican rice sizzlers



This sizzlers is my personal favourite. The combinations of this dish are just so tempting that u can't stop asking for more. Do try this. I am also uploading a video of the presentation.

Sizzlers as usual has different dishes presented together on a single platter.
Here we make 1 rice dish
3 side dishes
and 2 sauces

1. Mexican Rice
2. Kela-corn tiki
3. Stir fried vegetables
4.Jain French fries
5. Red sauce - 1/2 cup
6. White sauce/cheese - 1 tsp
7. 2-3 cabbage/lettuce  leaves for plating

Recipe- for 1 plate serving

Mexican rice
Ingredients
-Rice 1 cup
-1/2 cup Mixed vegetables chopped into dices
(cabbage, coloured capsicum, beans. Baby corn)
-Seasoning mixed 1 tsp
Oregano, basil, pepper powder and chilli flakes
-Salt to taste
- 1 tbsp olive oil

Method- heat olive oil in a Yok /pan. Stir fry the vegetables till semi cooked. Now add rice, mixed seasoning, salt, and stir to mix well.

Stir fried vegetables -
1 small cup mixed vegetables.
(cabbage, coloured capsicum, beans. Baby corn)
1 tsp olive oil
Salt and pepper to taste

Cut all the vegetables in long strips.
Stir fry in olive oil for 3-4 mins on high flame. Season with salt and pepper.

Jain French fries :
Ingredients -
Raw banana - 1
Corn flour - 1/4 tsp
Salt to taste
Oil for deep frying

Method - cut the banana in long thick strips.
Keep them in water for an hour, add 1/4 tsp salt in the water. Dry them on a cloth. Apply corn flour and little salt and mix it well on the strips. Now deep fry the strips till golden brown. Sprinkle salt on the hot fries.
Serve hot .
Note - Cut the strips thick, Fries are always soft and crisp.

Red sauce
Red sauce recipe
Makes 1 cup
Ingredients
fresh tomatoes - 4
Olive oil - 1 tsp (if not normal cooking oil can be used)
Tej pata - 1 big
Basil - 1/2 tsp
Oregano - 1/2 tsp
Ketchup - 1 tbsp
Salt - to taste
Sugar (optional)
Crushed Pepper - 1/2 tsp
Cheese - 1/2 cube (optional)

Method : boil tomatoes for 10 mins in a pan. Remove from water and cool them, remove the skin of the tomatoes and deseed them. Blend it to purée.
Heat oil in a pan, add tej pata ,next add the tomato purée after the oil is properly heated. Let it boil, Now add sugar and salt. After the purée starts leaving oil,  grate cheese , add tomato ketchup n mix well, now add oregano, basil and pepper. Boil once , remove the tej pata and discard and chill the sauce .

White sauce
This has 1 cup measurements. U need to make 2 tsp sauce

White sauce reciepe :
Makes 1 cup
Maida / wheat powder - 2 tsp
Butter / ghee - 2 tsp
Milk - 1 cup
Cheese - 1 cube
Salt - to taste
Sugar - pinch (optional)
Now according to the flavour u need add the dry spices
Pepper powder - 1/2 tsp
Oregano - 1/2 tsp
Chilli flakes - 1/2 tsp
Basil ( tulsi ) - 1/2 tsp

Method : heat ghee/ butter in a pan (thick bottomed) and add maida/wheat powder in it. Stir it. After the maida / wheat powder is roasted add milk ( add little by little) . keep stiring Continuously. The milk will get thick ( sauce consistency ) . Grate the cheese cube and add into it . Now add salt and stir well,
sugar is (optional). After this u can add the desired flavour (oregano- chilli- basic- pepper).

Jain Rava dosa



Rava dosa is a favourite of all age kinds. Simplest of all dosa batters because it needs procedures. But do not worry. A few trails n u will become an expert too.
Do try this. It's yummy.

Ingredients
1 cup rawa (soji)
1 cup rice floor
1 tbsp maida/flour
1 tsp chopped Green chilli
1 tsp chopped Coriander
Salt to taste
Jeera
Water 1 litre

Method-
Blend all the ingredients together. Make a watery kind of bater. Now heat the tawa and pour the batter from top uniformly. Cover the whole tawa with the bater. Let it be thin as possible. Now let it cook. Wen it's semi cooked add oil. Let it crisp. Remove from tawa uniformly. Serve hot with sagu or chutney.

Jain Dabeli



I tried this using home made jain Pav, and it tasted amazing. Absolute no difference as it tasted the same as store bought. It's easy and simple.

Ingredients 1 plate
Home made jain Pav - 2 pieces
Boiled and mashed kela - 1
Jain Dabeli masala - 1 tsp
Pomegranate - 2 tsp
Masala ground nuts- 2 tsp
Green chutney - 1 tsp
Imli chutney- 1 tsp
Salt to taste
1 tsp Oil to fry masala
Ghee to roast
Coriander to garnish
Bhel sev to garnish

Method
In a pan heat oil, add mashed kela and fry. Add salt, dabeli masala, and half groundnuts and mix well. Let it cool. Slit a Pav. Apply both the chutney on either sides of the Pav. Take half portion of masala and spread evenly on Pav. Sprinkle pomegranate coriander and sev. Repeat same with 2nd Pav.  On a pre heated girdle place both the pavs and toast
Them evenly from both side.  Sprinkle more sev on the edges. Serve hot.
