Masala khaman

Masala khaman

Plain khaman fried with oil and masala's.
Perfect served with coconut chutney.

Ingredients

For masala -
Oil - 1 tbsp
Mustard seeds and jeera seeds - 1 tsp
Hing - 1 tsp
Curry leaves - 4-5
Red chilli powder - 2 tsp
Turmeric powder - pinch
Coriander powder - 1 tsp
Lime - 1 tsp
Salt to taste
Coriander leaves- to garnish

Method -
In a pan heat oil, add mustard seeds, jeera seeds. Make them splutter. Add hing and curry leaves. Add khaman and all the rest items. Mix well. Garnish with coriander. Serve hot with chutney. Can be eaten cold with hot tea.

Plain khaman

These are made from a mixture of 4 items. A total healthy combo. Perfect for anytime of the day.
A little pre-preparations are required.  It consists of a complete meal constitutes.(dal-chawal)

Ingredients- for 12 pieces

Idli rice - 1/2 cup
Udadh dal - 1/2 cup
Toor dal - 1/2 cup
Moogar dal - 1/2 cup
2 green chillies
Salt to taste
Soda - 1 tsp

Method- soak all the dal's and rice for 4 hours, grind them to paste. Add salt and keep in a hot place for about 4 hours. Pre Heat a steam vessel. Add soda to the batter and Mix well. Grease a normal sized plate, pour batter equally. Now steam for around 15-17 mins. Serve hot with ghee and chutney.

Spong khaman

Spong khaman


These khaman are really tasty and are very famous as gujrathi khaman. They are really fluffy and yummy.

Ingredients-
1 cup besan
1 tsp soji
1 tsp lemon
1 tsp oil
1 tsp salt
1 tsp sugar
1 packet ENO
3/4th cup water

Method-
Mix all the ingredients except for ENO. Mix well and keep the batter aside for 5 mins. Till then heat a steam vessel, add enough water. Now Grease a plate and  preheat it for a minute. Add soda to the batter. The batter will double. Immediately pour the batter in the pre heated pan and steam for 12/15 mins.


For tadka and garnishing-
1 tsp oil
1/2 tsp mustard seeds
1 tbsp coriander leaf and grated coconut
Green chillies chopped 1 big
Water- half cup
Sugar - 1 tbsp

Method - in a pan heat oil. Add mustard seeds and make them splutter, now add green chillies, add water and sugar and boil for once.
Now shape the khaman into equal pieces and pour the tadka equally on every piece. Garnish with coriander and coconut(optional). These khaman taste good even if cold

Dudhi tomato soup

Dudhi tomato soup

The most healthiest soup to ever have, taste good enough and has amazing health benifits.
It thins the blood, help in purifying blood. So make sure your intake of this soup should be regular.

Ingredients

Dudhi- 1 cup
tomato- 1 small
Pepper and salt to taste

Method- pressure cook both with 1 glass of water.
Blend and seive. Boil the extract. Add salt and pepper as required.

Note- take a minimal salt.


Jain paniyaram

Jain paniyaram



Among all South Indian cuisine , dosa and paniyaram are my favourite. The mini idli shaped roasted idli s are just a perfect snack or an evening light dinner. They can be served with the tricolour chutney or just any 1 of them.


Ingredients-
Paniyaram- for 2 plate - 12 pieces
Well fermented Idli batter - 1 big cup - 12  tablespoons batter
1 Chilli and 1 tbsp coriander chopped well
Idli soda - 1/2 tsp

Chutney-
Red tomato chutney- 1/2 cup
Green pudina chutney- 1/2 cup
Normal coconot chutney- 1/2 cup

Method-

Mix idli batter, chopped chilli, coriander, soda and salt
Mix well. Grease a paniyaram tray and heat it a bit, fill in the batter, keep the gas on low flame, turn to the other side when roasted. Roast on both the sides. Serve hot with chutney

Jain Gobi manchurian (cabbage)

Jain Gobi manchurian (cabbage)

Chinese food is almost everybody's favourite, and the most favourite among all is gobi manchurian.
This recipe is the easiest among all I have tried so far.

Ingredients -
Manchurian
Gobi - 1 cup chopped very fine.
1 green chilli
Coriander - 1/4 cup
1 tablespoon corn flour
1 tablespoon wheat flour
1 tablespoon besan (chick peas flour)
1 tablespoon tomato sauce
2 tsp soya sauce
Salt and pepper to taste

Sauce and veggie -
1 tsp -Oil
Capsicum chopped, coriander
Sauce - 2 tsp corn flour, 1 tsp both the sauces,
1tbsp Water to make sauce little thin.

Method - mix all the manchurian ingredients. Make dumpling and deep fry them. Keep aside.
In a thick pan, heat oil, fry capsicum and add sauce and dumplings. Mix well. Coat each dumpling in sauce neatly. Garnish with coriander. Serve hot.
This recipe gives perfectly soft manchurian

Jain Spring rolls

Jain Spring rolls 

1 of my favourites. I simply love the simplicity of this recipe. Simple ingredients. Yummy results.



ingredients-

Outer layer-
Wheat flour - 1 cup
Oil -1 tsp
Salt to taste
Warm water to make stiff dough

The veggie masala -
Semi cooked Mixed veggie shaped in strips- 1 cup
Green chutney- half cup
Salt
Garam masala - 1 tsp

(Veggie - Capsicum, raw banana, cabbage, beans, peas and corn. Cook about 1 whistle in pressure cooker (till tender) Don't cook more. They must stay solid, remove water from the veggie completely. It should be dry.

Method-  mix the dough ingredients and make a semi soft dough.
Sabji- in a pan take 1 tsp oil and fry the green chutney. Mix vegetables. Salt and garam masala.
Let it cool down.
Step 1- make a roti using the dough, now as in picture,
Step 2- keep the sabji in between the roti
Step 3-4 - fold the roti.
Lock the conners well.
Fry in low sim. Fry till golden brown.
Serve hot with chutney and ketchup
